11 a.m. to 12:00 “Classic Beignets” Quentin Yates & Cindy Danan of Q&C Beignets Mesa College Students Culinary Arts/Management 1:30 to 2:30 pm “Wild Baja Shrimp Andouille Lollipops” with Saffron Artichoke Aioli Chef Bernard Guillas, Executive Chef of the Marine Room at the La Jolla Beach and Tennis Club 4:00 to 5:00 pm “Jambalaya” Chefs' Dave Vaz and Bob Hoy University of New Orleans & LSU Alumni Preparing family recipes The Mesa College culinary training program has been operating since 1964 and will have its 50th anniversary in 2014. As the strongest community public option for career training in this field, the college offers both an AS degree and a State Certificate in Culinary Arts and Management. College materials and liaisons will be available at the festival. |
